We decided to replace the Brie we usually serve on the Hrim Schola dayboard with fresh made farm style cheese this year. Here are some pics of the process: (Click on the photos for larger versions)

The draining rack: A Rubbermaid 18 gallon tote, bought specifically for this and has been carefully cleaned.

Even more bags of cheese hanging above the sink: This is where I usually hang cheese to drain when I make small quantities for our own use. I got more that I expected from this batch, so it ended up here too.
